Hi, it’s Terrie Young in the Euclid Fish Retail Market Kitchen. Talking salmon today. We love it, all different kinds. Today we’re going to talk about the Skuna Bay salmon from Vancouver Island. It’s a craft raised salmon, very high-end farm salmon. I have in front of me a couple different ways that I prepare it at home and in the store. Right now I’m starting and grilling some filets. Obviously I’m not going to be going outside in the snow, so I have my grill pan in the house. I put some Everything Bagel seasoning on it. And when that gets a nice crust on it we’ll turn it over. If I need to finish in the oven because that’s a nice thick piece, it’s going to take 10 minutes per inch, so that’s going to take about 12 minutes. And then in front of me here I have the salmon patties that we sell in the store. I’m having some friends over this weekend and I’m going to make them into sliders. That’s just easy - I just baked them in the oven, got those little Hawaiian buns, toasted them up, and decorated them with a little bit of the honey mustard dill sauce that you’ll really like. And we also sell that in the store. I’m going to serve this grilled salmon with some bean salad and some elbow pastas. The elbows are kind of the garnish to this dish, so you’re not really eating a lot of carbs in that.
I also sell quite a bit of the horseradish-crusted salmon. That’s easily done. You’re just going to get the salmon like this from us from the store and then mix together some seasoned Italian breadcrumbs, I like the Panko kind. Because they’re a little bit crunchier and I mix it with some nice fresh horseradish. When you mix that together, you just pile it on the fish, press that on, and then we’re going to put it on a baking pan and throw it in the oven, and that’s going to be delicious! That’s only going to take 12 minutes in a 400 degree oven. So once you have that ready to go, you can serve that alongside like I said the bean salad with the pasta. And it’s very easy to do. I want you to try it at home. And if you don’t understand exactly what I’m saying, come in the store and I’ll show you. So now I see this is getting a nice crust - you can see it cooking up. Turn that over. And let that cook for another at least 10 minutes in this pan. If I don’t have the oven ready to go, I’m just going to cover it. So those are some options for you.
