Hi, it’s Terrie Young in the Euclid Fish Retail Market Kitchen. I want to show you a little simple, easy dinner you could cook when you get home from work. Just do this in the morning or the night before and you’re good to go. This is poached in this bag. It’s called Cod en Papillote with little Mediterranean little tomatoes and artichokes. What I did is cut a piece of parchment paper in the shape of a heart. Lay the heart side down. Put a little bit of olive oil down. We’re going to put a nice piece of Alaskan cod on there. And then the artichokes and the tomatoes. These are sun dried tomatoes, we sell them in the store. They’re delicious. You can put anything in here. If you want to put a little bit of zucchini in here or scallions or onions, you can do that. The next thing you need to know is how to fold the little papillote. What you do is start at the point, right down here, and just start folding and folding on itself. It’s like a little origami. It’s just a way to keep this little sack closed. And press it down and fold and you’re going to make this little pouch. We’re going to pop in the oven at 350. It’s not going to take more than 15 minutes to cook. It steams right in this parchment paper. Put it on the pan. Pop it in the oven. When it comes out, cut it open and serve it beautifully to your guests or to your special someone. Have a great week!
