I want to show you some healthier options, and today I’m going to show you a blackened catfish. I have a nice hot pan, it has some oil sizzling on it. I’m going to blacken the catfish with some seasoning - always available in the store. Going to put that in the pan. And then we’re going to let that sit until it gets a nice crust on it.
In the meantime I want to show you this tilapia that I started. I baked it in the oven. All I did was drizzle a little olive oil on it, salt and pepper. And I chopped up some of our Marcona almonds. Topped it with a little bit of dried apricot, served it along with some nice quinoa grain.
