Here is her Mango Scallop Taco Recipe!
Mango Scallop Tacos
**Ingredients:**
- Hard corn taco shells
- Cabbage/carrot shred blend
- Mango (diced)
- Pico de gallo
- Grilled corn (kernels cut off the cob)
- Cilantro lime chili seasoned sautéed scallops (cooked in vegetable broth/butter)
- Green goddess dressing
**Instructions:**

**Prepare the Scallops:**
- If you haven't already, sauté the scallops in a pan with a bit of vegetable broth and butter, seasoning them with salt, cilantro, lime, and chili powder. Cook until they are opaque and slightly browned.

**Prepare the Taco Shells:**
- Heat the hard corn taco shells in the oven according to the package instructions until they are crispy.

**Assemble the Tacos:**
- Place a small amount of the cabbage/carrot shred blend at the bottom of each taco shell.
- Add a few pieces of diced mango on top of the cabbage/carrot blend.
- Spoon some pico de gallo over the mango.
- Add a generous amount of grilled corn kernels.
- Place the sautéed scallops on top of the vegetables and mango.
- Drizzle with green goddess dressing.

**Garnish and Serve:**
- Optionally, you can garnish with a bit more fresh cilantro or a squeeze of lime juice for extra flavor.
- Serve immediately and enjoy your delicious mango scallop tacos!
